| Goats Cheese and red onion tart |

50g butter 3 large red onions 5tbsp demerara sugar 4tbsp white wine vinegar 150ml water Beaten egg Shortcrust pastry Goats cheese slices
Peel and thinly slice the onions. Saute in the butter for 1-2 minutes, the add the sugar and cook for a further minute. Pour in the liquids and cook on a medium heat until the liquid has evaporated and you have a jam like consistency.
Mean while roll out a circle of shortcrust pastry and place on a baking sheet lined with baking parchment. “Crimp” the edges and brush with beaten egg. Place a layer of the red onion jam on the pastry and top with a slice of goats cheese. Bake at 180/gm5 for 25-30 minutes until the cheese and pastry are golden. |
